Grilled lampascioni (Tassel hyacinths bulbs) in olive oil
The lampascioni know as Tassel hyacinths, along with broccoli and Orecchiette are part of those ambassadors specialty in the world of the typical Apulian. They belong to the family of the tubers, are rich in minerals, low-calorie, purifying and antibiotics. The feature of this product is its bitter aftertaste. After peeled by hand the fresh product, the lampascioni are blanched in water and vinegar and put in olive oil. They can be used both as an aperitif and as side dishes to meat dishes.
